The warmer weather in #yyc always calls for crisp, refreshing food and beverages and nothing beats a hot day paired with a good ol' watermelon salad! Am I right!? haha
The truth is I actually don't love watermelon on it's own, but love the refreshing benefits and the fact that it's a fruit that is literally 92% water - so it's perfect for hydrating your body on those hot days or sneaking in that extra water intake for those that don't love sipping on their water. If you can't drink your water, you should at least be eating it and watermelon is the perfect fruit for that! Combine that juicy fruit with some crisp and equally refreshing Jicama and I would say that's a match made in heaven!
This watermelon salad is so simple to put together, literally requires no measuring of any sort, just toss everything in a bowl, mix and enjoy!
Here's what I throw together in my Hot Summer Salad:
Watermelon, cut into 1 inch cubes
Jicama, cut into small cubes
Crumble of feta cheese or vegan substitute
Fresh Lemon Juice
Drizzle of balsamic reduction
Freshly chopped mint or basil (both are equally delish)
Pinch of salt
*Optional: Add some chopped cucumber as well for added hydration and crunch!
